Baked Paani Puri Chaat

I got a packet of Baked Puris in the market and thought of making this Paani Puri Chaat. Now, to add a twist I have used a different filling of grated cheese, mashed potato and sweet corn. It tastes yummy.

Coriander Chutney recipe:
1 cup chopped coriander leaves
1/2 cup mint leaves
4 to 5 green chillies
Salt to taste
Sugar
1 tsp Fennel seeds
Lemon juice
Chat masala
Method: Grind to a smooth paste.

Tamarind Chutney recipe:
1 cup Tamarind
5 to 6 Dates
1 cup grated Jaggery
1 tsp Chilli powder
Pinch of Asafoetida
Salt to taste
1/2 tsp Ginger powder
1/2 tsp Jeera powder
Pinch of Black salt
Method: Soak tamarind in 2 cups of water for 1/2 an hour. Boil Dates. Strain and add ginger powder, red chilli powder, jaggery, salt, asafoetida, jeera powder, black salt. Bring it back to flame for about 10 min till jaggery melts. Make the chutney a little thin because it thickens on cooling.

Rest all is easy and quick. Do give it a try as a weekend snack.

Seasoned Idli with Sambar (In short, Tadkewali Idli :))

 

1. Idli batter

2. For seasoning
1 tsp jeera
1 tsp mustard seeds
Hing
Curry leaves

3. For Sambhar
Boil Tur Dal
1/2 tsp Turmeric powder
1/2 tsp Red chilli powder
1 tbsp Sambhar powder
Salt
1 tbsp Tamarind pulp
Jaggery as per taste
Coriander leaves

4. Chutney
Grated Coconut
Green chilly as per taste
Curry leaves
Salt

Method:
Heat oil in tadka pan, prepare the seasoning and mix well in the Idli Batter. Now steam in Idli cooker for 10 to 15 minutes.

For Sambhar:
In a pressure cooker add all the ingredients and boil 3 to 4 whistles.
Mix the Sambar well and add tadka (seasoning) if you like.

For Chutney:
Grind all the ingredients finely and season.

Now the whole aroma of these tadkas will fill the air and draw the whole family to your dining table. Enjoy this special morning with the most special people in your life!! 🙂

Green Chutney

Accompaniments form an integral part of our Indian menu. Be it pickle, papad, salad or chutney they are a must have in our homes.

Ingredients:

1 bunch coriander
Few leaves of mint leaves
Ginger 1 inch
Salt
Sugar
1/2 tsp Fennel seeds
1/2 tsp Jeera seeds
Lemon juice
5 to 6 green chillies

Method:
Grind into a fine paste and refrigerate and use as required.

This simple green chutney is a very useful accompaniment which can be used in a variety of ways. Just to quote a few:

1. As a side dish
2. With Vada, Dosa, Roti, Samosa,etc.
3. For sandwich
4. For Frankies and rolls
5. Add dahi to it and relish it with Parathas.
6. Give Ghee tadka, add green peas, chillies, add boiled dal, coconut, a small ball of jaggery, kokum or tamarind as you like and put in 2 tbps of this chutney. This is a different taste of dal.
7. Add some rock salt and Panipuri Masala, lots of water. This chutney can also be useful for Panipuri. 🙂
8.Add it to a sabji alongwith some dhaniajeera powder, chilli paste for a nice variety.

Add green chillies as per your taste requirements. Importantly, you can store this green chutney in the refrigerator for a week or two.

Hariyali Pavbhaji

Weekends should be special as that is FAMILY TIME… Sharing Hariyali Pav Bhaji Fondue with Nachos & Bread.

Ingredients
1big size Onion finely chopped
2 Tomatoes finely chopped
1 tsp Ginger paste
1 tsp Garlic paste,
Boiled Veg (1 Bowl Green peas, 1 Bowl Spinach )
1 Bowl Boiled and Mashed potato
2 tbsp Pav bhaji masala
Salt to taste,
1 tbsp Red Chilli powder
1 Lemon
Chopped coriander
Sliced bread roasted
Nachos
Butter
Grated Cheese for garnishing

Method
Heat oil in a pan. Add ginger and garlic paste. Sauté for couple of minutes. Add chopped onion, sauté another 2 to 3 minutes. Now add red chilli powder, pav bhaji masala. Add tomatoes and cook till soft. Now add the green paste (coriander, green chillies, spinach), add mashed potatoes, salt, lemon  juice. Serve in fondue dish add garnish with grated cheese  on top. Relish it with toasted bread or nachos.

Note: You can add any green vegetable of your choice as per your taste.

Spicy Bajra Dumpling

Spicy Bajra Dumpling

Ingredients
1 cup Millet Powder (Easily available in market)
1/4tsp Turmeric
1/4 tsp Red Chilli Powder
1/2tsp Dhana Jeera Powder
Salt to Taste

For Seasoning
Mustard Seeds
Jeera Seeds
Hing, (Asafoetida)
Urad Dal
7/8 Curry Leaves
2/3 Green Chillies
1/2 Cup Finely Chopped Carrot
1 Finely Chopped Onion

Method
Boil Water and add all the Dry Masalas, Millet Powder and salt to taste. Mix Well. Cover with a lid and steam for another 3 to 4 mins on low flame. Turn off the gas and let the mixture cool. Knead a dough and make small dumplings. Keep aside.

In another pan, heat some oil. Add mustard seeds, Urad Dal, HIng, Curry Leaves, Green Chillies, Chopped Onions and saute for a few minutes. Add Chopped Carrots, stir again. Now add the Millet Dumplings and Saute lightly for another 5 to 7 Mins.

Your ‘Spicy Hot Bajra Dumpling’ is ready to be served. You can make green chutney for accompaniment.
