Pista Phirni

Pista Phirni
Ingredients
1/2 cup Basmati Rice
2 cup Milk
1 cup Milk powder
1 Cup Milkmaid or Sugar
Pista soaked in milk & ground to paste
Cardamom powder,
Nutmeg powder,
Few strands of Kesar (soaked in milk)
 
Method
Soak the rice for an hour. Drain the water, add cold milk and make a paste. Now keep the rest of the milk keep for boiling. Gently add rice paste, cook for 15 to 20 mins on a slow flame, while stirring add Pista paste, diluted milk powder, add Milkmaid or Sugar simmer for another few minutes, keep aside for cooling. Refrigerate for at least 1 hour, serve chilled with saffron strands and Pista.
 
Note
You can add Almonds & Walnuts also..

Watermelon Sheera

Watermelon Sheera
Ingredients
2 cup Sooji (Semolina) roasted
1 cup Watermelon puree
1 cup Milk (as required)
1 cup Sugar (as per taste)
Cardamom powder,
Nutmeg powder
½ Tbsp ghee
 
For serving
Watermelon sauce
Milk powder,
Watermelon puree
Brown sugar
 
Method
Soak the Sooji for half an hour in watermelon puree. Now in a broad pan, heat ghee and add soaked rava. Roast till it mixes well and you get a nice aroma. Now add milk, sugar and mix well for another 5 mins. Now add nutmeg powder and finely add cardamom powder. Stir well till it becomes thick. You can add dry fruits as per choice.
 
For Sauce
In a small pan, add juice, milk powder and brown sugar, stir till the mixture becomes thick.
Garnish and serve as you desire.
 
 

Mix Fruit Dessert

Ingredients
1 cup mix fruits (Banana, Pomegranate, Apple, Chickoo
1 cup Custard Powder
Mix well and chill all fruits for  2 hours
For serving
Take a small glass with wider base, add in a Sponge Cake and pour some Coffee Concoction.
Pour the Fruit Custard mix and again add some crushed pieces of Sponge Cake.
A lovely cool dessert, ready to be served…

Melon Fruit Ball

Ingredients

1 cup melon
1 cup papaya
1 cup orange juice
4 to 5 soaked almonds
One Pinch of sugar
Mint leaves for garnishing

Method
Insert a melon baller into the centre of one muskmelon half or quarter. Twist the scoop around completely, cutting out a perfect ball. Do the same with papaya as well. In a bowl, add orange juice, sugar, muskmelon ball, papaya ball and soaked almonds. Garnish with mint leaves.

Note
You can use a variety of fruits to make these fruit balls.

Wheat Flour Kheer

Ingredients

1 Cup of Wheat Flour
½ Cup of Jaggery
1 ½ Cup Milk
½ Cup of Water
Cardamom Powder, Cinnamon Powder
Pistachios, Almonds for Garnishing

Method
Heat a tablespoon of ghee and roast the wheat flour on a low flame till the colour changes to light brown. Add water, take care that lumps are not formed. Add Milk and Jaggery and let it simmer for 4 to 5 minutes.

Presentation and Serving
Garnish with a pinch of Cardamom Powder, Cinnamon Powder, Almonds and Pistachios. Serve Hot.
